The blade of this ice-hardened (CRYODUR®) knife consists of 133 thin layers. They encapsulate the core of a steel sheet (MicroCarbide MC66). During production, the blade is subjected to a special hardening process to ensure hardness (66 on the Rockwell scale), ensuring a knife with excellent stability and a sharp edge. The knife gains a sharp point thanks to the Honbazuke technique, a traditional Japanese process in which both sides of the blade are sharpened and polished in three different ways.
