The Sujihiki knife has an ice-hardened blade (CRYODUR®) with a core made of high-quality MC66 powder steel surrounded by 132 layers of steel. A special cold hardening process (at -196°C) ensures hardness, stability and a sharp knife edge. Both sides of the blade, thanks to the Honbazuke technique, have a Japanese design and an exceptionally sharp edge.
The handle is made of the highest quality black ash wood in the traditional shape of Japanese knives. Its size and shape ensure optimal balance, making this knife pleasant to the touch, regardless of the grip and cutting method.
