The Japanese Santoku knife from the Miyabi 6000MCT series is a knife for everyday use, and its name comes from the "Three Virtues", i.e. meat, fish and vegetables, which it cuts perfectly.
The blade is made of MicroCarbide MC63 powder steel embedded in 2 layers of steel, and then subjected to an ice hardening process (CRYODUR®), which ensures a hardness of approximately 63 on the Rockwell scale, particularly good durability, corrosion resistance and optimal blade flexibility.
The dark brown wooden handle is comfortable to hold thanks to its ergonomic shape and allows for trouble-free work for a long time without feeling tired.
The manufacturer paid attention to the authentic Japanese blade profile, obtained by hand forging. The knife has been polished using the Honbazuke technique.
