The Japanese Santoku knife from the Miyabi 5000MCD 67 series has an extremely hard core made of MicroCarbide powdered steel to keep the edge of the blade as sharp as possible.
Santoku is the best-selling Japanese type of blade, and the name comes from the "Three Virtues", i.e. meat, fish and vegetables.
The core is surrounded by 132 outer layers of steel which create a unique Damascus pattern on the blade.
The cutting blade made in the Honbazuke technique is symmetrical, so it can be used by right- and left-handed people. It does not have a finger guard, so the entire length of the cutting edge can be used.
