The blade is made of MicroCarbide MC63 powder steelembedded in 2 layers of steel and then subjected to an ice hardening process (CRYODUR®), which ensures a hardness of approximately 63 on the Rockwell scale, particularly good durability, corrosion resistance and optimal blade flexibility.
The steel is hand-forged, giving the blade a wonderful traditional Japanese look. The knife gains its final sharpness thanks to the Honbazuke sharpening technique. Small dents on the blade ensure that food does not stick to it.
